Melanie's (Gluten Free) Organic Flap Jacks

Our flap jacks this year were particularly good. Here's Melanie's recipe.

Tea Brack Ingredients
  • 250 gm Organic Plain Flour
or, for the gluten free option:
  • 200 gm Organic Ground Almonds
  • 50 gm Organic Mixed Seeds
  • (Sunflower, Sesame, Pumpkin, or whatever)
  • 650 gm Organic Jumbo Oats
  • 430 gm Organic Butter
  • 4 tablespoons of Golden Syrup
  • 250 gm Organic Raw Cane Sugar (Brown)
  • Pinch of bicarbonate of soda

Mix the flour, oats and bicarbonate of soda together (or almonds and seeds, if making the gluten free option)

Melt the butter in a pan. Do not boil or burn! Add the golden syrup and sugar. Add this mixture to the oats, flour and soda and mix well.

Put the mixture in a baking dish which has been greased and lined. Flatten the mixture with the back of a spoon.

Bake in a moderate hot oven until golden brown. About 45 minutes. Cut into squares while still warm, but allow to cool before removing from tray.
